Simple lunches are my FAVE!
They take no time at all, they are delicious, I'm not spending an abundance of time in my kitchen over the stove or sink, and it's super fast and easy because it's already ready for me!
Plus, I feel lean and full of energy after eating it.
1 cup cauliflower, broken into small pieces
1/2 cup carrots, I "matchstick" mine in a food processor
1/2 cup shredded purple cabbage
1/4 cup kale, torn into small bite size ruffles
1/4 cup sunflower or pumpkin seeds (which are super high in protein!)
2 teaspoons poppyseeds mixed with healthy Italian dressing or drizzle healthy poppyseed dressing over top
The secret is in the sauce until you learn to love the flavor of fresh vegetables, pick ones you love! Mix your vegetables of choice together and top with dressing.
