Chicken Potato Artichoke Chowder

I love soup weather! And here is my first installment for the season! I had some leftover chicken and artichoke I wanted to use up plus I've been in a real crave for Real Simple food. Yummy foods that take pretty basic ingredients. There's nothing more basic than potatoes so that was the start of this yummy meal.

  • 3 medium-size potatoes peeled and diced
  • small onion diced
  • 2 carrots sliced
  • 3 cloves garlic chopped

Sauté this all together in 2 Tablespoons of butter or coconut oil until browned and slightly tender. Toss in:

  • 2 Tablespoons coconut flour
  • 1 cup of beef broth
  • 2 cups of chicken broth and
  • 1 cup of coconut cream
  • Add in 1 Tablespoon of parsley a teaspoon of salt and a dash of pepper cover and simmer until potatoes are tender.
