I love soup weather! And here is my first installment for the season! I had some leftover chicken and artichoke I wanted to use up plus I've been in a real crave for Real Simple food. Yummy foods that take pretty basic ingredients. There's nothing more basic than potatoes so that was the start of this yummy meal.
- 3 medium-size potatoes peeled and diced
- small onion diced
- 2 carrots sliced
- 3 cloves garlic chopped
Sauté this all together in 2 Tablespoons of butter or coconut oil until browned and slightly tender. Toss in:
- 2 Tablespoons coconut flour
- 1 cup of beef broth
- 2 cups of chicken broth and
- 1 cup of coconut cream
- Add in 1 Tablespoon of parsley a teaspoon of salt and a dash of pepper cover and simmer until potatoes are tender.
