I used to love sandwiches and let me tell you eating grain-free challenges that a bit! It's been years since I first altered my diet. I can't believe I didn't think of this sooner. And to his credit....it was actually my husband that pointed out the obvious, so call this recipe a joint effort.
This is actually my cracker recipe. In fact, I was in the process of making crackers but we were all ready for supper and I didn't want to wait anymore, so the "crackers" were still a bit thick, lighter and definitely not crunchy. So my husband says. Why don't you just cut it into squares for bread. Duh. Seriously? Why had I not thought of this?
So we let my "crackers" be softer, cut the large rectangle on the pan into sandwich sized squares and Voila, sandwich bread!
Here's this sandwich recipe:
3 eggs diced
1 avocado diced
Drizzle 1 teaspoon avocado oil
Salt
Pepper
Dill sprinkled to taste
Stir altogether.
I happen to love my sandwiches with sprouts so if you have them handy, feel free to add them!
