Step 1:
1 zucchini, sliced lengthwise, thin
1/4 cup olive oil
1 Tablespoon basil
1 teaspoon oregano
1 teaspoon parsley
salt
pepper
Toss zucchini with the rest of above ingredients.
Step 2 Tomato Sauce:
1 cup grape tomatoes
1/4 cup black olives
1/4 cup green olives
1 clove garlic
4 basil leaves
Add above ingredients to food processor, pulse.
Step 3 Cheese Filling:
1/2 block cream cheese
1/2 cup parmesan cheese
1/2 cup asiago Romano
Add to blender/food processor, until creamy.
Spinach
In a dish, layer ingredients starting and ending with zucchini. Start with zucchini, add sauce and cheese and spinach, then zucchini again, repeat and end with zucchini.
