I tend to get on little kicks about what I'm eating. Certain foods will be my favorite for a while and then I'll move on to something else. Lately it's been these delicious little lunches that I so love and look forward to! They're quick simple little tuna salad boats. I love that it literally takes me 30 seconds to make one and I can take it with just as easy as a sandwich.
Make the tuna salad up ahead of time and keep it in the fridge you can decide how ambitious you are if you want to make your own homemade mayo. Otherwise it's just as easy to use a good natural mayo from the store.
I filet up one fillet of tuna cooked however you can just as easily use one can of tuna
1/4 cup of mayo
Salt and pepper
1 tsp dill
Keep this covered in the fridge and you can scoop it out to make your boats everyday. You simply cut an avocado in half and remove the large pit
Then just put a scoop of the tuna mixture and a pile of alfalfa sprouts on one half, saving the other for later. A little sprinkle with pepper and you're done!
