Vegetable Lo Mein

I love this vegetable meal...it is so flavorful for being super simple.  It took me all of 15 minutes from cutting to eating.  

Cut and prep all the vegetables first as you will be adding them quickly in succession.

2 carrots

1/2 purple onion, sliced

2 celery stalks with leaves

1 zucchini

1 cup broccoli florets

1/2 cup mushrooms

1/2 yellow bell pepper

 

In a wok, stir fry:

1 clove garlic, minced

1 tbsp sunflower oil or sesame oil

1/2 c vegetable broth

1/2 purple onion, sliced

 the carrots,celery and broccoli

 

In the meantime, prepare noodles according to package directions and set aside.  I use these:

Also, prepare the sauce.  If you can find a natural healthy sauce mix like this one, it makes it super simple.  This is a good one.

If not, here is a recipe for one of your own:

1/4 c braggs liquid aminos

1/2 tsp ginger

2 tsp oriental seasoning

3 tbsp cornstarch

1 tsp garlic salt

blend together and set aside.

 

Once vegetables are tender, add the rest of the vegetables and saute for another 3 minutes.  Pour the sauce on top and saute until thickened, approximately another 3 minutes.  

Toss together with the noodles and serve immediately.  

You'll be surprised how much food it makes, and how quickly.
