I love a good filling meal in the evenings. And it's great to come up with a great new burger with new satisfying whole foods protein sources and high nourishment potential. I love this "accidental" burger that started with wanting to use up chickpeas, a half a dish of quinoa leftover, and my son's apple he wanted and then didn't want. What resulted is a yum yum yummy dish I will definitely be making again.Â
Boil together:
1 celery stalk, chopped, with leaves
1/2 cup quinoa
Also, sauté in 2 Tablespoons coconut oil
1/3 cup onion
2 carrots chopped
2 cloves garlic
Add 1 chopped apple towards the endÂ
In a separate bowl:
3 Tablespoons flax seeds soaked in 3 Tablespoons water
1/3 cup oat flour
1 can mashed chickpeas
1/4 teaspoon each of cumin, coriander, salt and pepper, and pinch of cayenne
Patty them up and either bake at 425° for 10 minutes or sauté in a little coconut oil.
Spread hummus and sprouts on top, serve with or without a gluten-free bun and enjoy! Makes about a dozen.
