Bread Free Tuna Salad Sandwich

A simple personal sized way to have sandwiches without having to take the tedious time out to make a loaf of specialized bread.  

I used to spend whole Saturdays making grain-free bread, then painstakingly slicing, and freezing between parchment paper, taking one or 2 put to thaw later as needed. 

Now I keep it simple with my single serve sandwich bread. 

Even if you aren't following a specialized diet and just want to reduce the amount of congestors in your diet, it's delicious for anyone!

1/2 cup almond flour

1/4 cup water

Pinch of salt or garlic salt

1 egg, beaten. 

Mix together well. Divide it in half by pouring 2 circles of batter onto a hot oiled griddle. Fry like pancakes, both sides.

Add your favorite tuna salad recipe (I like 1 can tuna, 1 teaspoon dill weed, dash garlic salt, and 3 Tablespoons Spero brand herbed dairy-free cream cheese) as a filling to one round, top with the 2nd round.
