Creamy White Bean Soup

Creamy White Bean Soup

Finally!  A cream soup that isn't grain based.  So delicious.  So simple.  Let me know how you like it!


Saute together:

2 tablespoons olive oil,

1 tablespoon basil

one diced onion

1 cup shredded carrots

1/2 cup sun dried tomatoes

3 cloves garlic.

Saute until slightly tender.  Then add:

1 can butter beans,

1 teaspoon Sage

a dash of salt and pepper,

2 cups beef broth

and the cream sauce.

The cream sauce is made of:

1/2 cup each of

macadamia nuts

cooked butternut squash

and coconut milk.
