Flu Fighter Firm Up Pancakes

Unfortunately our home is not immune to bugs that go around.  In fact, when you've got teenagers that work on a farm, yep, they might come across some real bowel upsetting problems if they are not diligent in being clean.
Whether it's farm boys like me, or typical flu bugs that you face, I created these pancakes as Congestor Function. 
Each ingredient is a congestor I used on purpose to give the congestive function of the body to firm up bowels.  Some people find this particularly helpful if they are suffering diarrhea. 
Plus, they are anti-inflammatory and avoid wheat so as to honor a tender tummy and the body's more sensitive immune response.
They can be eaten warm or cold as snacks and munched on throughout the day.
The Cakes:
1 cup Gluten Free flour blend.  I use Pilsbury.
1/2 C quinoa flour (for protein) 
1/4 c coconut flour
1/4 c flax meal 
2 eggs
2Tbsp sunflower oil
1 tsp vanilla
1 tsp baking powder
1 tsp baking soda
dash salt
1/4 cup honey
Mix with a hand beater until well blended and pour by 1/4 cup onto a hot griddle. 
Flip and brown on both sides.
Honey is also a congestor, but it is a good idea to use it sparingly, and instead of syrup or sugar, spread a thin layer of honey and serve.
A good local raw honey is the oldest known antibiotic food.
