This was so so so good. Do I say that about all my recipes? Yeah, I think it's getting over-used. It was delightful.
I wanted a fun yummy treat for family movie Friday without it being a pizza party junkie. So glad the effort was made. But really, it took not much skill, and not much effort but was a huge hit!
One note, I made it on a stoneware pan. Do not do this. While initially it's delicious, it doesn't take long and one of the very purposes of stoneware (to keep it moist) kicks in. Yep, you end up with a gooey, while tasty, mess. Next time, I will use parchment on a stainless cookie sheet.
Crust:
2 cups walnuts and pecans blend
2 cups dates
Pinch of salt
2 egg(you can omit if you want it vegan, or use a flax egg instead)
Bake at 350° until crispy.
The "sauce":
1 cup of dripped coconut milk yogurt (you need some preplanning on this, just put cheesecloth over a bowl and spoon the yogurt into it, put it in the fridge and allow it to "drip" the excess liquid overnight.
2 Tablespoons liquid stevia
1 container of coconut milk cool whip
Fold together and spread on baked crust.
Top with your favorite fruits:
strawberries, blueberries, raspberries, blackberries, grapes, cherries, and even some nuts work great
