2 ripe star fruit, divided
1/2 cup diced mango
1/4 cup sliced green onion
1/4 cup diced red bell pepper
1/2 avocado, diced
1 Tablespoon lime juice
1/2 teaspoon ginger juice
1/4 cup fresh bread crumbs (use Udi's brand bread)
1/2 Tablespoon flaxseed
1/4 cup finely chopped pecans
1/2 teaspoon ground ginger
1/2 teaspoon seasoned salt
1/4 teaspoon lemon pepper
1/4 cup milk
Shredded parmesan cheese
4 skinless tilapia fillets
Dice 1 starfruit, Combine with avocado, mango, green onion, bell pepper, lime juice and ginger juice. Set aside and allow flavors to blend.
Preheat oven to 400° F. In shallow plate, combine breadcrumbs, flaxseed, pecans, ginger, salt, and lemon pepper. Place milk in another shallow plate. Coat tilapia fillets with milk then coat evenly with breadcrumb mixture. Repeat with remaining fillets.
Arrange fillets in a single layer in oiled shallow baking pan. Bake 12 minutes or until fish flakes with a fork.
Serve with star fruit mixture, garnish with remaining star fruit and shredded parmesan.
