Taco "meat":
1/2 cup lentils
1/2 cup garbanzo beans
1/2 cup mushrooms
1/2 cup red peppers
1/2 cup green peppers
1/2 cup onion
1/4 cup black olives
Favorite taco spices to taste: cilantro, cayenne, chili....
3 Tablespoons olive oil
Add all above ingredients to food processor, pulse.
Humus of choice
Collard leaves
Alfalfa sprouts
Guacamole
Salsa of choice
Spread humus on collard leaves, add "taco meat" alfalfa sprouts, taco meat, guacamole, and salsa from above.
