1 turkey or turkey breast, roasted
2 carrots, chopped
1 onion, chopped
1-2 cups butternut squash, cubed
1 cup mayo
1 cup cheddar cheese
Shred the meat and place in crockpot. Take the liquid and bones, add water to cover bones, bring to boil. Remove bones, add chopped carrots, onion, celery, and cubed butternut squash. Cook until tender. Once tender, puree the soup and veggies. Pour over the shredded turkey meat (just enough for the right consistency). Add mayo and cheddar cheese. Salt and pepper to taste. Enjoy.
