I love this meal. It's the perfect comfort food on a cold day, yet with enough freshness that you don't feel that sickening heavy belly that usually goes along with it.
This is a low carb meal using spiralized zucchini noodles, my famous gluten-free "Cream of Mushroom" sauce and fresh toppings.
Paired with some fresh rosemary, this dish will have you feeling satisfied and happy on a cold winter day, or as the sun goes down on your porch after a good long day.
1 bowl of zucchini noodles made with a veggie spiralizer
1 batch of gluten-free cream of mushroom
1/2 cup spinach shreds
1/2 cup matchstick carrots
Handful fresh sliced mushrooms
a couple sprigs of fresh rosemary
How to put it together:
Lay the zucchini noodles in the bowl, add a spoon of cream of mushroom, top with the spinach, carrots, mushroom slices, rosemary and maybe another drizzle of the cream of mushroom. This dish is so easily made ahead of time as well, and can be served cold as well.
