Nutter Betters

Yep, truly better than commercial Nutter Butters. Sorry boys, you were a favorite a LONG time ago, a sweet indulged, less healthy time ago. But I never forgot you. And I'm sorry, but I've found a new flame, and it makes me feel so indulged, without all the unhealthy fats, sugars and calories that came alongside my relationship with you. I've moved on.

Delicious! Better than the original! And healthy too. Nutter Betters are a Builder, not a congestor food I'm  happy to say! So they can be indulged with less guilt. Enjoy!

 

Nutter Betters Cookie Portion

2 eggs

1/4c coconut sugar

1/4c honey

2 tsp vanilla

1/4tsp salt

1 tsp baking soda

1/2c sunbutter

1/2c coconut oil (or butter if you just really don't like coconut taste)

Mix until smooth

Add 2 cups almond pulp (I use the pulp that's left after making almond milk in my almond cow. It works great for this! Its more moist though than almond flour, so if you're using almond flour,  add in slowly. You want the batter to slightly runny. This allows it to pour out flat, like an 1/8 in thickness.)

Mix well.  Pour onto parchment lined baking sheet. I pour it into long oval shapes. They look kind of like conventional Nutter Butters. 

Bake at 375 until crisp. About 12 min.  

Filling:

1 Cup sunbutter 

1/2c dates

1 tsp vanilla

Pinch salt

Puree together in a food processor. 

 

After cookies are cooled, spread the filling between 2 to make a sandwich. I like to freeze mine so they're extra crispy.  Let me know how they turn out for you!
