Gluten Free! Â Refined Sugar Free! Â Super Fiber!
I am so amazed and in love with the multiple "flours" available on the market! Â It makes it sooo much easier to experiment with yummy recipes and not have to do everything yourself!
The latest find was banana flour, which literally is dehydrated banana and ground to make a flour. Â I can tell you I have been having so much fun playing around with this. Â Here is a super basic Banana Muffin, with of course my little twists to add as much power packed punch as possible (PPP asap)Â
I added applesauce for fiber and to replace the sugar (banana flour is naturally sweet anyway) and oatmeal as a fibrous base also. Â The goal was to create a filling fibrous breakfast to cleanse the colon, absorb toxins and then, unlike traditional baked goods, move it through the intestines, cleaning as it goes and end up with a nice clean colon. Â OH, and you get to enjoy a fantastic breakfast while all of this happens!

1 cup oatmeal ground into flour
1/2 c banana flour
1 tsp baking powder
1 tsp baking soda
1/2 c coconut milk
1/4 c honey
1 ripe frozen banana
1/3 c applesauce
1 T chia seeds
1/4 c sunflower oil
1/2 c carob chips
Blend the dry and wet separately, then mix together and bake at 350 approximately 20 minutes. Â They do not rise much, so you can fill the cups. They brown nicely and are awesome when served right away while hot!
