Spanish Rice Casserole

2 cups brown rice, cooked

1 Tablespoon olive oil

2 cloves garlic

1 small onion, chopped

1 red pepper, chopped

1 green pepper, chopped

1 celery stalk, chopped

1 large can diced tomatoes 



Chili powder

Red pepper flakes

Vegetable juice 

Optional: 1 can of chicken

I large pan sauté garlic, onion, peppers, and celery in olive oil. Add the can of diced tomatoes. Add seasonings to taste, simmer. Add cooked rice and enough vegetable juice to cover. Can add chicken if you would like. Simmer until juice is mostly absorbed.
