Tortilla Soup

This is one of my new favorites!  It's easy to make. It's a crock pot meal, so it's an easy to get ready meal when you're going to be gone all day and won't have time to make supper. I make it ahead and it provides lunches for me all week.  Each 1 cup serving is only 118 calories! Plus it's full of good protein, iron, and vegetables. It's also very easy to make vegetarian by omitting the chicken, and using vegetable broth instead. 

Tortilla Soup

4 cups chicken broth

2 cups cooked chicken

1 can black beans

1 can Rotel diced tomatoes with green chiles

1 red pepper diced

1 purple onion, diced

1 cup cheddar cheese

Salt and pepper to taste

2 stalks celery, with tops to retain their sodium/potassium balance

1 cup brown rice, uncooked

1 gluten-free taco seasoning packet (optional.  I usually make my own, but this could be an easy substitute)

Put all ingredients into the crock pot.

When serving, crush corn tortilla chips in the bottom of the bowl and then add soup on top, with a few cheese shreds.

Thanks for the receipe. Made it tonight with a couple of tweeks. Quinoa instead of rice, some chopped jalepenos and some fresh corn. Delish!
