Oh my heavens I am in LOVE with these Vegan Sloppy Joe's. They are my new favorite go to. They are unbelievably tasty. In fact, I made them and traditional sloppy joes for the meat eaters in my family, and my husband preferred the Vegan variety. What I love is that they are NOT made with those processed fake meat alternatives....which I do not believe are healthy. No, these are a perfect Builder food.
I eat them with my almond flour crackers instead of bread or a bun and of course, pair the combo with Eliminators for Functional Balance.
Best yet? They contain NO ingredients in which you would need to worry about consistent refrigeration, so they make a perfect take to work lunch!
Vegan Sloppy Joes
1 cup quinoa
1/2 cup lentils
Boil together until tender.
Add this plus 1 cup walnuts into food processor.
Add 2 Tablespoons natural ketchup and 2 Tablespoons natural mustard,(more to taste)
1 teaspoon dill weed
Salt and pepper to taste
1 Tablespoon nutritional yeast ( great source of B12!)
Pulse together and serve.
